Bacon adds flovor to a nice filet mignon

Years ago, my local butcher asked if I wanted a piece of bacon wrapped around the filets I was getting. "Sure" I said, curious to try something new. It was a wise choice !

A couple other tips....try sprinkling some crumbled bleu cheese or a pat of a flavored ("compound") butter on top.
