Bacon Wrapped Meatloaf-Kicked Up Version of a Classic

Basic Meatloaf Recipe with Some Alternatives
1 lb. lean ground beef (or can use pork or a 50/50 combo of both)
 1 cup ketchup, chili sauce or your favorite BBQ sauce
1 Egg 1 Cup Plain Bread Crumbs (or try Italian flavored)
1 tsp. dried thyme leaves
 1 Cup diced onion (can eliminate if don’t have onion fans in the family)
 1 tsp pepper
1 tsp salt (prefer Kosher)
Prep & Cooking:
 Heat oven to 350*. In large bowl, combine all ingredients except 3 tablespoons of the ketchup chili sauce or BBQ sauce; mix well. Press mixture firmly in ungreased 8x4-inch loaf pan. Bake at 350°F. for 30 minutes. Top with 3 tablespoons of ketchup, chili sauce or BBQ sauce you set aside. Bake an additional 10 to 15 minutes or until thoroughly cooked in center and meat thermometer registers 160°F. Let stand 5 minutes. Remove from pan.

“Kick It Up A Notch” Top the meatloaf with the 3 tablespoons of sauce before putting in oven, then cover top with strips of bacon and bake as directed above.

Classic S'Mores are always a tasty treat...but want not try your own the pics below highlight...substitute chocolate cookies for graham crackers...creamy peanut butter or caramel sauce for the piece of chocolate...keep the toasted marshmellow but then use you imagination !

Shish Kabobs can make a tasty side dish or a meal...

Marinate in some Italian dressing or your own favorite marinade and pop on the grill. Add pieces of steak and/or some shrimp and you have a nice entree'. Be as creative as you want..vary the vegetables.

Bacon adds flovor to a nice filet mignon

Years ago, my local butcher asked if I wanted a piece of bacon wrapped around the filets I was getting. "Sure" I said,curious to try something new. It was a wise choice !

A couple other tips....try sprinkling some crumbled bleu cheese or a pat of a flavored ("compound") butter on top.
